Pancakes with Ears

Today I made pancakes for breakfast for my Japanese student and my two children I look after.  I have a really great recipe which I will include below and a lovely long electric griddle that makes the best pancakes. In days of yore(long ago) I used two skillets on the stove going full-tilt.  The griddle works wonders.  Today I played around with the pancake process and made some small round pancakes with ears that look like teddy bears or Mickey Mouse.  I think all three children will say “Cute”.  It was fun.  I used to make alphabet letters with the dough when my kids were small but the challenge with that is getting them out of the skillet in one piece.

Here is my recipe for great tasting pancakes:

Buttermilk Pancakes

1 1/4 cups of buttermilk(milk with 1 tbsp of vinegar) if you don’t have buttermilk

2 eggs, well beaten

1 cup sifted flour

1/2 tsp. baking soda

1 tbsp. sugar

1/2 tsp. salt

1/4 cup melted butter

Heat griddle slowly. Add buttermilk to eggs; beat well with beater. Add mixed and sifted flour, soda, sugar and salt.  Beat until smooth. Add butter; mix in quickly. For each pancake, drop 1/4 cup batter on a hot griddle . When bubbles occur, turn over.  Turn only once, pop into a warm oven, stacking pancakes to keep moist.  Double recipe for larger crowd.  Pop leftover pancakes in ziplock bags and refrigerate for snacks later on.
